Seitan, of Japanese origin, is a highly protein food that is obtained from soft wheat gluten, or from spelled or kamut.
It is ideal for adding protein to vegetarian and vegan diets, but also for reducing the intake of foods of animal origin, which increase cholesterol and contain fat.
Seitan is obtained through a fairly long process that aims to extract gluten from flour by removing starch.
